Soooo, of late, I have been eating a pescatarian diet. I know, food fads can feel obnoxious, but it seems to be my body’s favorite way to fuel itself. Veggies, legumes and fish seem to keep inflammation down and my body energized….so, I’m going with it! But that doesn’t mean I don’t like a little decadence.
So, when Sam came back from a lunch at California Pizza Kitchen and started raving about this incredible dish where they switched out the chicken for cauliflower bites to create a buffalo sauced dream….I was like, ummm we gotta make that!
I know, I know, cauliflower: another food fad. Trust me, the way that cauliflower takes on the flavor of sauces makes this dish melt-in-your-mouth incredible! Hahaha, and I went with another food fad by making it gluten free! Roll your eyes if you must (hahaha I would if I were you) but this one is a keeper!
I love how easy this recipe is because the sauce is simply based on the awesomeness of Frank’s Red Hot sauce.
Start by cutting your cauliflower into bite sizes. Then dunk them into a mixture of egg and water, then into seasoned gluten free flour, and then into a hot skillet prepped with a 1/2 cup of olive oil for frying.
The sauce is crazy simple, you guys! Just whisk together the melted butter with the Frank’s Red Hot sauce. That’s it!
Once the cauliflower are all golden and crispy, it is time to give them a bath in deliciousness!
Now, simply top your pile of yumminess with scallions and bleu cheese. Oy vey, this is scrumptious!
I cannot express to you just how awesome this plate of yumminess is from a simple picture. You guys, I am salivating. Grab a beer and make a plateful this weekend. You will feel like your are eating pub food at home. Talk about some naughty veggies lol!
Crisped gluten free cauliflower bites drenched in buffalo sauce and topped with slivered scallions and crumbled blue cheese.
- 1 head cauliflower cut into bite sizes
- 1 egg scrambled with a dash of water
- 1 cup gluten free all purpose flour
- 1/2 cup FRANK'S RedHot® Original Cayenne Pepper Sauce
- 1/3 cup butter melted
- 6 scallions sliced into shreds
- 1/4 cup bleu cheese crumbled
In a medium bowl, season your gluten free flour with salt and pepper to taste.
In a smaller bowl, scramble your egg with a bit of water to make it thinner for dunking the cauliflower.
Heat a large skillet with a 1/2 cup of olive oil for frying. Taking each cauliflower "bite", dunk it first into the egg, then into the seasoned gluten free flour, and then carefully into the hot oil.
While you watch the cauliflower, turning them when necessary to make them golden all over, it is time to whip up the sauce. Melt your 1/3 cup of butter and whisk it together with the 1/2 cup of Frank's Red Hot.
Last step is to top your piled high cauliflower bites with your shreds of fresh scallions and crumbles of bleu cheese. Now, get ready for the addiction! This dish is awesome served hot....but I don't even mind eating the leftovers cold out of the fridge 😉
