It’s almost time for trick or treat!! Final touches are being put on my kiddos’ costumes. Excitement is in the air as the grocery cart gets loaded up with bags of candy in anticipation for all the little ghouls and goblins that will come knocking on the door. This is such a fun time full of childhood memories made and being made. I love seeing this time of year through my kid’s eyes.
I must admit, that I routinely “trick or treat” my kids loot on Halloween. I think it’s a rite of passage as a mama. Oh, the sugar! So, much sugar!! At least some of our traditions are a bit more healthy. Case in point: pumpkin carving ALWAYS turns into a pumpkin seed roast. I love messing around with flavors for these super snackable, healthy seeds. It just wouldn’t be halloween without them! So, in honor of this weekend and all the orange flesh that is being whittled away at so many houses over the next couple of days, here is one of my favorite flavor combos to zest up your own pumpkin seed roast!
Chili Lime Honeyed Pumpkin Seeds
pumpkin seeds from one pumpkin
zest of 2 limes
2 tsps lime juice
3 tbls honey
sea salt to taste
1 tsp chili powder
After doing the goopy, sloppy seed removal, give them a rinse and coat the with all the above ingredients.
Then, spread them out on a cookie tray and roast them at 300*F for approximately 45 minutes. Give them a stir half way through, just to make sure things aren’t burning or cooking unevenly.
The snack-ability of these is insane! The zest makes them taste so lively and fresh!!
