Good morning, you lovelies. Rise and shine on this glorious Saturday. Today’s post is kind of a scramble…both figuratively and literally. Here’s the story: one of our sweet Zesties came into our headquarters for a typical Zest work day, but life had thrown her some serious curveballs. She was pretty darn stressed and worn out. Being that I am a “feeder,” my solution was to scramble about in the kitchen and make her a proper breakfast to combat the effects of high emotion and fatigue. I may be a feeder, but at least I don’t immediately fry up donuts or something. Instead, I bulked up some scrambled eggs with her absolute favorite veggies: brussel sprouts. I mean, honestly, how many of us are good about starting the day with a good dose of vegetables?
Grab your ingredients below and let’s get to scramblin’!!
Get your skillet nice and hot. Add in the coconut oil and the brussel sprouts, and saute them until them get a bit browned and caramelized. Don’t forget to season them with salt and pepper.
Once your brussels are happy, crack in your eggs and give it a scramble.
When the eggs start to set, add in your feta.
Yum yum.
Hahaha it was only after I made this for her that she confessed that she didn’t like eggs that much. But, she was freaking out over this dish. I think I inadvertently created a convert. The good news is her day began to look up after a good meal and a little TLC.

Need a quick and healthy breakfast? Gets your greens in at the very beginning of the day with these brussel sprout and feta scrambled eggs!
- 10-15 small brussel sprouts, sliced
- 1-2 tbsp coconut oil
- salt & pepper to taste
- 3 eggs
- 1/4 cup feta cheese
