No matter where you are I hope you are fully embracing summer, and if you are in Atascadero like us, I know you are embracing these high heat temps. Oy veyyyy- triple digits is never good when it comes to the thermometer! So for a quick “pick me up” to cool down we are busting out some delicious blueberry basil popsicles, but in zest fashion we have to make them boozy.
- 3 cups fresh blueberries
- 1 cup fresh basil
- 1/2 cup agave
- 1 cup water
- 2 lemons zest
- 3 shots vodka
- Popsicle molds
First put blueberries, agave and water in saucepan and let simmer to break down the blueberries with the basil. I even gave my mixture a whirl in the blender to really puree the mix. Next I zested two lemons, added the vodka and then poured into my molds.
Pop in the freezer overnight and then enjoy!
(p.s. I do feel like these melted quickly bc of the alcohol in them, eat fast!!)
