Blistered Shishito & Creamy Chili Orange Sauce

I hope you have had a chance to truly indulge in all that this season has had to offer.  I freaking LOVE this time of year!  There is such an abundance of produce that it makes my head spin…and I am already looking forward to the fall plantings for a hardy winter crop.  Yum!

Yep, I am totally one of those geeks who finds herself craving and hankering for veggies.  Now don’t get me wrong, I may love my veggies with total abandon, but I tend to keep things naughty.  There always seems to be some sauce or dip that sneaks onto the stage to take my veg out of the solo limelight into an amazing duet.  Such is the case with my shishito peppers.  Have you ever had??  If the answer is no, then you have got to get on this train.  I think every joint that has a bit of hipster tinge has got shishitos on the menu for cocktail hour it seems.  On their own, they are insanely yummy.  Sweet, earthy and totally snackable, these cuties take on another level of awesome once blistered and hot!  Then, things get all kind of crazy once you whip up this little Creamy Chili Orange Sauce.  Absolutely crazy!  Mind blowing crazy….like pour me a cocktail crazy!!

Starting with a mayo base (I told you this was going to be easy), add the orange zest, juice, and 1-2 teaspoons of crushed up dry chipotle chilis.

Adding a bit of pink Himalayan salt and a good stir, the sauce is ready for some action!

Now, simply wash and dry your shisito peppers.  Leave them whole and give them a nice drizzle of olive oil.

Add them to a dry, hot skillet.  Turn them as they begin to blister and “burn” in spots.

Serve these beauties hot!

Simply drizzle them with your sauce and a sprinkling of coarse salt.  I think you should get ready for a flavor explosion, and some total shishito chic!  Paired with a crisp pinot grigio you are going to even “wow” yourself…despite knowing how little effort you actually put in 😉

Cheers to being a culinary rockstar in your own kitchen!
