Apple Butternut Squash Bruschetta

I am SO excited to finally see Fall color making an appearance and having some more crisp nights where I actually want to bundle up!! Eee! Can hardly contain my excitement!! With that comes all the fall fabulous foods!! As some of you know I used to work at See Canyon Fruit Ranch apple stand, so when I think of fall recipes it almost always brings apples to my brain! From gala to fuji, pippin and ladysmith- you really can’t go wrong in my opinion. I figure I would marry my Italian roots to this fall apple obsession and create a tasty apple bruschetta. This recipe was SO easy to make and addictive in flavor. From the cream goat cheese to the nutty brown butter and sweet and hearty apples and bruschetta, a new fall favorite for sure! The perfect addition to a Halloween party, Fall Harvest dinner or even Thanksgiving appetizer.

Cube your apples and butternut squash and sauce them in olive oil.

Meanwhile add your butter to a pan and place on medium heat allowing butter to brown but not burn. Browned butter should smell nutty flavored and be a walnut color. Next mix your goat cheese with salt and pepper in a separate bowl and spread onto toasted crostini slice.

Once butter is browned remove from heat and then add to butternut squash and apples once done being sautéed.

Assemble and time to enjoy!!

This fall appetizer is easy to make and has the perfect crunch and creamy nutty flavor.

Ingredients
  • 1 tbsp Olive Oil
  • 2 tbsp Butter
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 medium Apple
  • 1 medium Butternut Squash
  • 1 toasted baguette slice into crostinis
Instructions
  1. Cube your apples and butternut squash and sauté them in olive oil. Meanwhile add your butter to a pan and place on medium heat allowing butter to brown but not burn. Browned butter should smell nutty flavored and be a walnut color. Next mix your goat cheese with salt and pepper in a separate bowl and spread onto toasted crostini slice. Once butter is browned remove from heat and stir into to butternut squash and apples once done being sautéed. Add about a tablespoon of the bruschetta mixture to each crostini and serve!
